Is it taste like normal Lasagna?

Not exactly. And the plot is also different. But it’s an excellent low-carb substitute. Zucchini slices don’t work as well as noodles in terms of keeping the shape of lasagna, making this dish more fragile than a traditional noodle dish. Low carb keto lasagna is one of my favorite dishes in my life. 

But in terms of flavor, it’s another win for low carb cooking, keto cooking, and another proof that the starches in many recipes simply absorb other flavors.

This dish tastes amazing. So good, in fact, that I’m not going to do it too often, as I came across THREE, yes, three large slices instead of the one I was going to have. Yes, it is that good! By the way, another great low carb lasagna is this low carb spinach lasagna.

In this delicious low carb zucchini lasagna, zucchini slices replace the noodles. This low-carb, gluten-free, keto dish has all the wonderful flavors of lasagna.

  • 1 1/2 tsp kosher salt, divided
  • 1/2 tsp Black pepper, divided
  • 1/2 tsp garlic powder

  • one tablespoon minced garlic
  • 1 1/3 cup Marinara sauce, divided
  • fifteen oz cottage cheese with whole milk, room temperature

How to prepare zucchini lasagna

  • You start by cutting the courgettes lengthwise, seasoning them and roasting them.
  • Cook the meat with garlic, spices and marinara sauce.
  • Mix the ricotta with eggs and basil.
  • Assemble the dish by layering the slices of grilled zucchini, beef, ricotta and grated mozzarella.
  • Cook until hot and bubbly.

Grilling the courgette slices:

  • Preheat the oven to 350 ° F and reheat the grill over medium heat. Cut the courgettis lengthwise into 1/4-inch thick strips, making 6 slices from each courgetti.

  • Drizzle the courgetti slices with cooking spray and sprinkle with 1/2 teaspoon of kosher salt, 1/8 teaspoon of black pepper and 1/2 teaspoon of garlic powder.

  • Grill the courgetti slices, in batches, 2-3 minutes on each side, or until golden and firm, not golden and crisp. Spread them on clean kitchen towels to absorb more moisture.

Cook the meat and prepare the ricotta layer:

  • Take a large skillet, heat the olive oil over medium-high heat, about 2 minutes. Add the meat, minced garlic, 1/2 teaspoon of kosher salt, and 1/4 teaspoon of black pepper. Cook, stirring with a wooden spoon to break through the meat, until the meat is browned, 5-7 minutes. Drain in a colander, then return the meat to the pot and mix in 1 cup of marinara sauce.

  • Take another bowl, with a fork, mix ricotta, eggs, basil, remaining kosher salt, and black pepper.

Assemble the lasagna:

  • Spread the remaining 1/3 cup of marinara sauce on the bottom of a 9 X 13 baking sheet. Add the marinara sauce with a layer of courgettes, then one third of the ricotta mixture, one third of the meat mixture and one third of the mozzarella cheese.

  • Repeat the operation, placing the courgette slices in the opposite direction: courgettes, 1/3 of ricotta, 1/3 of meat mixture, 1/3 of mozzarella.

  • Repeat it bone last time, adding an extra layer of zucchini: zucchini, ricotta, mixture of meat, zucchini and mozzarella.

Cook the lasagna:

  • Bake, uncovered until the cheese turns golden brown, about 30 minutes. You can finish grilling for 1-2 minutes over high heat to brown the cheese if you wish and if your dish is suitable for grilling.

Why are you roasting zucchini slices?

Zucchini is very watery, so move on to the extra step of roasting the slices before putting the dish together. Grilling will help them dry and remove some water. Otherwise, they will release your water into the lasagna as it cooks. Grilling works best for removing water from zucchini. But as an alternative to grilling, you can bake the zucchini slices in a 500F oven until golden brown, about 5 minutes per side.

Or roast them 6 inches from the heating element (not directly below), 3-4 minutes per side. Remember to set the oven to 350F when done. Grilling is by far the best way to remove the water content and avoid watery lasagna.

Which sauce to use?

It goes without saying that the flavor of your lasagna will largely depend on the marinara sauce you use. I love to use sugar-free pasta sauce and my favorite is Rao’s. It has a clean list of ingredients and the Arrabbiata hot sauce is wonderful. It’s also available on Amazon.

How to serve it?

This lasagna is a complete meal. So there is really no need for a side dish to go with it. But sometimes I add a green vegetable, like steamed broccoli.

Can use it later?

Yes, you can be stored in the refrigerator, in an airtight container, for 3-4 days. Heat them in the microwave, covered, to 50% power. You can also freeze leftovers.
